ANNATTO OIL

I do not quite pay too much attention on these seeds when I was young. Thinking it was just a seed, I usually play with these little red things like bullets for toy guns. Well according to my very close friend Wikipedia, annatto or sometimes called as achiote, is derived from a tropical tree. These seeds are a good source of yellow to orange food coloring and the best ingredient for the annatto oil. Annatto oil is basically infusing oil with annatto seeds.

Here is a quick recipe on how to make your own annatto oil for your cooking since it is quite difficult to find in supermarket.


Ingredients:
1 1/2 Tbsp Annatto (Achiote) Seeds
1/4 cup Olive oil

Procedure:
1. In a sauce pan, mix annatto seed and olive oil under medium fire.
2. When you see some bubbles around the seeds, turn off the fire and let it soak for about 1 to 2 minutes.
3. Strain the seeds and place it in a clean and covered container.
4. Ready to use.

Note:
1. Do not overcook the seeds since it will create a bitter flavor.
2. You can also use vegetable oil, corn oil or canola oil as alternative for olive oil.
