LEMON CHICKEN

With the diversity of foods here in the Philippines, I can hardly choice which food to eat. Cuisines I like are American, Italian, Korean, Japanese, Chinese, Mediterranean and actually a lot more. So whenever me and my better half goes out on a date, we also end up asking each other, "Where are we going to eat?".

One of our dates, we decided to go Chinese foods. We went to The Podium Mall and dine in Gloria Maris. I am a big fan of chicken so I can never forget to order Lemon Chicken. According to some, this dish is rarely found in China that makes it weird. Basically, it is consists of pieces of chicken that is either sauteed or fried coated in a thick sweet-and-tangy lemon sauce. Some restaurants bake the chicken though and I think it is much healthier minus the oil of course.
Ingredients:
For the chicken
4 pieces Chicken Breast, skinless
1/2 cup All Purpose Flour
Salt and pepper to season
1/4 cup Cooking Oil

For the sauce
1/2 cup Lemon Juice
2 tsp Chicken Powder, Knorr
2 Tbsp Honey
2 1/2 Tbsp Brown Sugar
1 tsp Ginger, grated
1 cups Water
2 Tbsp Cornstarch dissolved in 3/4 cups Water

Procedure:
1. For the sauce, combine all the ingredients in a saucepan and stir over a low heat until it boils. Add cornstarch dissolved in water to thicken the sauce. Set aside.
2. Cut the chicken breast fillets into 3-4 pieces. Season with salt and pepper.
3. Place all purpose flour in a bowl. Dredge seasoned chicken in flour until fully coated.
4. Heat oil and fry until lightly browned. Drain on absorbent paper.
5. Coat fried chicken breast with lemon sauce. Ready to serve.

Tips:
To make it more presentable, add sliced of lemon wedges and parsley to garnish.
